First Baby Backs of the Year

Put some baby backs on Saturday with some home made rub concoction that included some Tony's over pecan and black cherry for a slow smoke. Touch of Sweet Baby Ray's at the end. They was some damn fine eating. Also had some garden corn and green beans from the freezer.

How did you like smoking with cherry?

I've got a good bit of cherry to use, but I haven't tried it yet. The cherry wood that I have has a really strong smell.
The Doctor said I should drink more whiskey. Also, I'm calling myself 'The Doctor' now.

I thought it added a sweet flavor. Pecan by itself is sweet but the cherry was a good complement. Just don't use a lot of it. Put a little on at first and see how that goes. I will usually rub a clean finger on the meat after the first smoke and taste it. If its not too smoky I'll add a little more. Problem is most people put way to much smoking wood on and it overpowers. My rule is less is more. I also don't care for hardwoods for smoking like oak or hickory. Compared to fruit wood they are bitter. Pecan is the best in my book.

I smoked some yesterday with apple and pecan.
Dont sweat the petty things and dont pet the sweaty things.
