Campfire Cafe
Any of you boys caught this show on PBS? There is some down-home, country style cooking. They even sell campfire cooking equipment for those SERIOUS outdoor cooks. Here's a link to their website Campfire Cafe

DMR - This past weekend the dude cooked up the peachy almond salmon. Man did that poopoo look good! If you catch this on the tube, be sure and put your redneck/cajun/hillbilly thinkin' hat on though. The host has a country drawl like I haven't heard in a long time.
Since you folks are so good about taking up collections, you can take up a collection and buy me one of those cowboy cooksets, including swing out grill and warming tray.
Peachy Almond Salmon
Serves 6 - 8
1 2-lb salmon filet
1 can sliced peaches, with juice
1/2 cup slivered almonds
2 Tbls cornstarch
3 Tbls butter
2 eggs
1 cup milk
2 cups flour
1/2 cup olive oil
Drain peaches and preserve the juice. Dice peaches into smaller pieces. Melt butter in skillet over medium fire. Add almonds and toast until slightly browned. Add cornstarch and whisk until completely blended with butter.
Add the peaches and the juice. Stir and continue to simmer until sauce thickens slightly. Keep warm ? we use our Warming Grill for this.
Combine eggs and milk and whisk well. Slice fillet into 2-to-3 inch strips. Dip into the egg and milk mixture and dredge with flour. Heat olive oil in skillet and fry the fish strips until golden brown. Remove from skillet, top with peach almond sauce and serve hot.

I checked out the website. Very cool. I will have to watch for it on the idiot box. I checked out a few of the recipes, and copied a couple for our father-son float trip. Thanks for the heads-up.

I've watched it a couple of times and it is interesting. We've cooked in Dutch ovens for quite a few years and if you haven't tried it, you should. You won't find a better way to cook, with little mess, little clean up, and very few utensils, and it's virtualy "hands off" once its going.
