All these darn recipes you've posted and I only saw 3 or 4 for trout. Got any secret seasonings you use on them coldwater fish? I got some in the freezer that I'm thinking about putting on the smoker.

ODF: I have eaten trout a variety of ways. The best way to eat trout is to cut it into nuggets, batter (buttermilk pancake batter, I'm tellin ya, it's is the poopoo) and fry.

MoCraig: I would like to say I did somptin cool while going to school. Truth be known, I was a full menu cook at Denny's for almost a decade. I might not know what a shallot is, but I know an over-easy egg from an over-medium and I can make one helluva chili cheese omelet. Image

Trout nuggets?? So just fillet the fish out and chunk it up? Hmm, can't say I've had trout nuggets. I normally bake or smoke 'em, but I may have to give that a try.

Yes, trout nuggets. I'm talking pancake batter, not pancake mix. You want the batter thick enough that it coats, but does not drain off. I had me a batch yesterday and they is good dipped in mustard. Far better than catfish.

Why pancake batter, as opposed to the beer batter mix?
Maybe you catch bigger trout than I do, but they may end up being an awful thin "nugget". Image

Just split and gut your trouts. Put some butter, a lil gralic powder (not garlic salt), and a slice of lemon in'em. Wrap'em in foil and place'em in the camp fire coals for bout 10 minutes. Best trout you'll ever have!

I got my daily limit of four....and a couple others the next morning. Wanted my possession limit...but the fish weren't cooperating.

Yeah, those trout parks can be pretty tough. It takes the fish a while to adjust to not being fin-to-fin in a concrete pond.

Trout are not fit to eat, when I catch them, I usually just throw them up on the bank, there is no need for their kind to be in MO anyway.

Let's just say I prefer panfish to trout, but fresh caught trout thrown on a grill with a little butter, ain't too bad.
