Ingredients: 3 lbs of deer meat, ground
1 lb chopped deer sausage
1 12oz can of beer
2 8oz cans of tamato sauce
1/2 cup bell peppers, chopped
1/4 cup cayanne peppers, chopped
1/4 cup longhorn peppers, chopped
1/8 cup habanero peppers, chopped
1 cup onions, chopped
2 tbls minced garlic
1/2 lbs of butter
3 cups of water
1/2 cup of chili powder
1 tbls paprika
1 tsp cumin
1 tsp oregano
Procedure: Saute the peppers and onions in the butter until the onions become clear. Add the ground deer meat and sausage. Brown the meat on low heat, stiring often. Once the meat has browned add the beer. Cover and simmer on low heat until the liquid is gone, stiring occasionally.
Add the tomato sauce, water and remaining seasonings. Mix well and cover. Let simmer for two hours, or until chili reaches desired consistency.

One thing I really like when making chili is replacing tomato sauce with canned seasoned tomatoes. Del Monte (I think) has a wide variety of seasoned tomatoes in cans...cajun, onion and garlic, Italian style, etc..
