Vented a little one Sunday morning. They are just the right size for eaters when you can take out your knife and cut right thru the pelvic bone.

I like the ones that still have that last row of spots that run along their spine. Easy to drag, easy to skin, easy to butcher, fit in the back of my Tahoe with no problem, and damm tasty.

btw...here`s a little trick for you with that pelvic bone. After you slice the deer open, and cut down to the pelvic bone, feel the underside of the bone and you should feel a little nub. If you put the point of your knife directly on top of that nub, and drive it down with the palm of your hand, that pelvic bone will split open with ease. It works well with a fixed blade knife. Be careful with a folding knife though.

Splitting pelvic bones is an art form. I've seen some guys that just make a mess of deer when they field dress'em. That's why I'm particular about my knives. You should be able to do exactly what you talked about by driving the point of a knife into the bone and working side to side and it will pop right open.

If that makes some folks nervous that they might go a little deep with the knife and poke thru something that leaks, you can always cut around the anus and get it free from the body and when you cut the diaphragm muscles and esophagus you can pull it all out in one fail swoop. Then work on the pelvic bone.

But those little ones that bone is soft enough to just cut right thru.

Elk are a differnt matter altogether and I can only imagine what a moose might be like. I'll know someday.

Gerber bone saw does pretty well. Makes working the anus a non-havta using the method described by TTN. Clean as a whistle.

Yep I'll take a fawn every time for meat, and ease of butchering work. TTN is right though, splitting the pelvis clean is an art form. I've done it right many times, but every once in a while, on older deer, it's a real chore.

A nice sharp hatchet works wonders on a pelvic bone.

I like eating 1.5 year old deer. I figure if I am going to spend the time to skin one down, debone it, and slice it up, then I had better get my $s worth. As far as the pelvis bone is concerned. I don't have a good answer for those bastages. I have been considering buying a hatchet now for umpteen years.
